The head pastry chef, Ms. Zhang Tingting, has curated the Chinese New Year’s afternoon tea paired with a balanced selection of sweets and savouries to elevate the afternoon relaxation ritual for the lunar new year. In the shape of an auspicious red envelope, the Chestnut Earl Grey Mousse Cake, with a velvety texture, offers a mellow chestnut flavour with an Earl Grey tea finish. The Kumquat Cheesecake has a unique appearance inspired by the ancient gold ingots that symbolise wealth and prosperity in the coming year. The soft and glutinous cheese is mixed with sour and sweet kumquat to offer a refreshing and less greasy taste. Early spring is a great time for fresh berries. The sweet and refreshing Strawberry Chantilly Roll looks like a mini Swiss roll, with circles representing the endless happiness of annual reunions. Even more sweets and savouries are available for guests to enjoy. It will be a fantastic experience to chat with friends or family members over a cup of tea while tasting delectable snacks in the afternoon during the Spring Festival.
