Cucina Invites Guests on an Italian Gastronomic Adventure with New Game Menu
Guests can kick off the gastronomic adventure with the Selection of Cold Cuts of Wild Boar and Venison, Parmesan Cheese, Condiments (HK$328). Perfect for sharing, this platter features three types of cold cuts: a strong-flavoured wild boar mortadella, another with a milder flavour and a hint of smokiness and a robustly flavoured salami made with venison. The meats are served with Parmesan cheese, dried apricots and pickles to balance the rich and bold flavours.
Next, the Baked Fillet of Venison, Celeriac Root Purée, Chocolate Sauce, Mixed Berries (HK$588) features the most tender cut of meat paired with a creamy celeriac root purée. The accompanying chocolate sauce boasts a delightful bitter cocoa undertone. Served with tangy raspberries and aromatic juniper berries, this dish offers a harmonious blend of flavours.
Guests looking for a classic Italian dish are sure to be delighted by the Risotto with Forest Mushrooms, Roasted Quail Breast, Black Truffle (HK$368). Roasted to achieve a perfect combination of tenderness, juiciness and crispy skin, the quail is then served with different seasonal mushrooms, including dry porcinis, chanterelles, champignons and others. The flavours are delicate and wonderfully balanced.
Another highlighted dish is Roasted Pigeon, Pumpkin & Ginger Purée, Duck Liver Bonbon, Saba Sauce (HK$428). This delectable creation begins with marinated pigeon slow-cooked with hot wine and then roasted to perfection with a ginger and soya sauce infusion. It is served alongside a pumpkin and ginger purée, which adds a subtle spiciness to balance the rich flavours. The accompanying saba sauce, made from grapes and freshly crushed juice, offers a delightful sweetness to complement the dish.
Guests can also indulge in the authentic flavours of Tuscany with the tantalising Fettuccine with Stewed Wild Boar in Chianti Sauce (HK$358). This traditional Tuscan delicacy showcases the region’s renowned wild boar and chianti. The tender boar is slow-cooked for three hours in red wine, infusing it with rich flavours. Prior to stewing, the meat is marinated overnight with juniper berry oil, cloves, bay leaves and vegetables to balance the robust flavours.
Also not to be missed is the Stewed Guinea Fowl Ragout Garganelli, Baked Ricotta Cheese, Toasted Pine Nut (HK$348). The tender and flavourful game bird is expertly cut into pieces and simmered with celery, carrots, onions, white wine and bone stock for two hours. The dish is elevated with the addition of baked ricotta cheese, which provides a mild yet complementary flavour to the rest of the dish. Toasted pine nuts, meanwhile, add a delightful texture, and the inclusion of pumpkin imparts a touch of sweetness.
