Cucina Welcomes Michelin-Starred Chef Piergiorgio Siviero from Lazzaro 1915 in Pontelongo, Italy
Piergiorgio started his culinary career back in 1999. He worked at several prestigious institutions, including the Kulm Hotel in St. Moritz and the Grand Hotel et de Milan in Milan. His work with Aimo Moroni at the Michelin two-starred Il Luogo di Aimo e Nadia in Milan as well as with renowned celebrity chef Alain Ducasse at the Michelin three-starred Le Louis XV - Alain Ducasse at the Hôtel de Paris Monte-Carlo marked significant milestones in his culinary adventure and pushed him towards new experiences. Piergiorgio is now the owner of the Lazzaro 1915, a Michelin-starred restaurant since 2012, where he focuses on sustainability and locally sourced produce.
Piergiorgio has created a custom à la carte menu for Cucina, featuring an array of exquisite dishes that showcase his signature style and passion for Italian cuisine. Guests can begin their culinary journey with the Seared Apulia Cuttlefish, Lard, Juniper Berry Oil, Green Pea Foam (HK$308) or indulge in the Raw Sicilian Red Prawn, Confit Tomatoes, Watermelon, Capers, Mozzarella Cheese Sauce (HK$228). For the pasta course, there’s the richly flavoured Risotto with Saffron, Parmesan Cheese Foam, Rice Crackers, Black Truffle (HK$388) or the Pappardelle with Duck Ragout and Cashew Nut Liver (HK$368). Both pasta options are accompanied by a hearty Mushroom Minestrone, Roasted Celeriac Root, Mixed Herbs (HK$198).
For the main course, guests can enjoy the Grilled Beef Tenderloin in ‘Bismarck Style’, Marinated Egg Yolk, Quenelle of Carrot (HK$388) or the Baked Iberian Pork Pluma, Mussels, Red Onions, Italian Green Sauce (HK$368). For a lighter option, the Pan-fried Fillet of Alaskan Black Cod, Lemon Butter Sauce, Milk, Cabbage and Lemon (HK$428) is an excellent choice. Another seafood option is the Fillet of Chilean Seabass, Garlic, Oil & Chilli, Mole of Tomatoes and Cocoa (HK$458), which offers a perfect balance of flavours that will leave guests wanting more.
The meal rounds off with Piergiorgio’s decadent desserts. Not to be missed is the Candied Strawberry and Rhubarb, Carrot Juice, Wasabi Namelaka, Grilled Grapefruit (HK$108), which features delicate flavours and a creative combination of fruits. Also recommended is the Dark Chocolate Molten Cake with Extra Virgin Oil, Sichuan Pepper, Raspberry Sorbet, Matcha Green Tea (HK$108) and the Vegetarian Tiramisu, Pumpkin and Ginger Ice cream, Sweet Potatoes Foam, Porcini Caramel (HK$108). Every dish is a masterpiece in its own right, carefully crafted to showcase the freshest seasonal ingredients and to elevate the art of Italian cuisine to new heights.
Piergiorgio will be in residence at Cucina from 16 to 20 August 2023. Apart from the all-day à la carte menu, Piergiorgio will also present a set lunch menu, weekend brunch menu and elaborate tasting menu and wine dinner during his five-day residency. Guests can visit Cucina and savour Piergiorgio’s Italian masterpieces while enjoying the stunning views of Victoria Harbour.
