Cucina’s New Signature Menu Celebrates the Finest Flavours of Italy

Hong Kong SAR, China, 21 April 2023 – From 26 April to 25 July, Cucina’s Chef de Cuisine Andrea Delzanno showcases the best culinary traditions of his native Italy with a new four-course signature set menu. Masterfully crafted by Chef Andrea, the menu features four elaborate and authentic dishes that will take guests on a gastronomic voyage from the south to the north of Italy.

Guests will kick off the Italian feast with the light and refreshing appetiser of Octopus Carpaccio, Orange Fennel Salad, Tomatoes, Lemon Oil Dressing. The dish shines a spotlight on famed fresh produce from Sicily, including oranges and tomatoes. Chef Andrea also uses octopus caught from the Mediterranean Sea and enhances its delicate flavour with bright citrus notes from the accompanying ingredients, such as the orange, fennel and lemon oil dressing.

For the second course, Chef Andrea draws inspiration from the northern region of Emilia-Romagna with the Garganelli with Stewed Duck Ragout, Pumpkin, Parmesan Cheese. This regional speciality combines al dente pasta with a rich and tender duck ragout that’s balanced by the sweetness of the pumpkin.

Gourmands will then continue their gastronomic journey to Piedmont, which is Chef Andrea’s beloved hometown. The main dish of Veal Scaloppini, Porcini Mushrooms, Mashed Potatoes, Black Truffle Sauce features tender veal that pairs especially well with the rich and robust accompaniments of black truffles and porcini mushrooms.

The feast ends with the quintessential Italian dessert – Traditional Tiramisù, Lady Finger, Mascarpone, Espresso Coffee, Cocoa Powder. Chef Andrea makes this dessert according to a traditional recipe from Veneto in the north-eastern part of Italy to showcase the charm of this sweet treat in the most authentic way.

Guests can pair the menu with four exquisite Italian wines to elevate the overall dining experience. The wine pairings are available for an additional HK$440 per person (four glasses) and can also be ordered by the glass.
