White truffles are highly prized for their rarity and unique aromas. Chef Andrea proudly presents this ingredient in his masterpiece of Taiyouran Scrambled Eggs, Seared Hokkaido Scallop, Salmon Egg and White Truffles (HK$428). Taiyouran eggs from Japan are acclaimed for their rich texture and delightful sweetness. In this dish, it is paired with succulent Hokkaido scallops to create a harmonious blend of flavours along with the white truffles. The addition of savoury salmon roe adds a touch of umami to this delectable dish.
Another highlight is the Potato & Leek Cream Soup, Seafood, Shaved White Truffles (HK$348). The potato absorbs the earthy flavours of the truffles while the leeks provide a subtle sweetness, creating a delectable blend of textures and tastes. To elevate the dish to new heights, Chef Andrea incorporates seafood, including octopus and shrimp, which complements the white truffles without overshadowing their earthiness.
Guests can also savour one of the most renowned dishes of Piedmont – Handmade Tagliolini with Butter, Parmigiano Cheese, White Truffles (HK$498). A personal favourite of Chef Andrea, this dish showcases Cucina’s al dente homespun pasta made with premium Taiyouran eggs. Parmigiano cheese adds a delightful savoury dimension that enhances the overall flavour without covering the taste of the white truffles. This simple yet sublime pasta is the best way to enjoy the white diamond of the kitchen.
Meanwhile, seafood lovers should not miss the special creation of Baked Chilean Seabass, Sautéed Clams, Potatoes Mousseline, White Truffle Caviar Sauce (HK$538). The seabass, renowned for its tender texture and subtle taste, is expertly paired with earthy white truffles. The potatoes mousseline offers a luxurious creaminess that perfectly complements the rest of the dish. Chef Andrea also adds a hint of white truffle caviar sauce, which contains fish stock to enhance the seafood flavours.
