The rainy season lasts from July to August each year, due to the humid climate in Yunnan and western Sichuan fresh mushrooms pop up out of the soggy and wet mountainous soil after the rain. Staying true to the concept of "eating in accordance with the seasons, and selecting the best ingredients with the original taste", Chef Lucas cooks mouthwatering dishes with various types of fresh mushrooms, including Matsutake, Morel, Boletus, Alpinia solani and Agaricus edulis, all sourced from Yunnan and western Sichuan.
He pairs the traditional Sichuan dish – chicken tofu pudding with alpine matsutake mushrooms to enhance and enrich the original flavour of rich mellow soups. Steamed yellow croaker with homemade mushroom sauce is also a must-try dish. The fragrant salty homemade sauce is crafted by slowly simmering seasonal fresh mushrooms over low heat. Ningde yellow croaker has always been favoured by foodies thanks to its original sweet taste and delicate flesh. Paired with the homemade mushroom sauce, the dish features a fragrant flavour and velvety texture, producing a pleasant lingering aftertaste. Chef Lucas also presents a not-to-be-missed course, udon noodles with boletus sauce, seasonal white boletus is crushed and simmered over low heat to make a delicious sauce. Paired with the smooth texture of udon noodles, it retains the delicious taste of fresh mushrooms in the mouth, and making it unforgettable to try.
