Cucina celebrates the season of Australian black truffles
The Western Australian black truffle is a highly sought-after ingredient renowned for its intense aroma and earthy flavour profile. Its rarity and high demand make it an exclusive ingredient in fine-dining circles.
A must-try dish is the baked crab meat in shell, creamy leeks, black truffle caviar, black truffle (HK$288). Exquisitely presented in the crab’s carapace, this delightful dish combines the rich textures and flavours of sweet crab meat, creamy leeks and rich truffle caviar. The culinary creation is further elevated with freshly shaved Australian black truffles on top.
Another chef-recommended highlight is the beef tenderloin carpaccio, truffle cheese, button mushrooms, rocket, black truffle (HK$298). This sensational creation features paper-thin slices of expertly prepared Angus beef paired perfectly with cheese and mushrooms to create a delightful contrast of textures. The fresh truffle shavings on top is the perfect finishing touch that adds an earthy, musky scent. The dish boasts a buttery and tender texture and a light and delicate flavour that is sure to impress every diner.
Gourmands can also indulge in the pan-fried Italian veal chop, seared duck liver, black truffle sauce, black truffle (HK$528). The succulent veal is cooked to melt-in-the-mouth perfection, while the seared duck liver and luxurious black truffle sauce add rich and decadent flavours that complement the tender meat.
Other not-to-be-missed dishes include the risotto with wild mushrooms, ”Testun” barolo cheese, asparagus, black truffle (HK$368), a tantalising dish that perfectly combines the earthy flavours of wild mushrooms with the rich aromas of black truffles. For those seeking for classic Italian flavours, both the fettuccine with butter & parmesan cheese sauce, fresh Tuscan sausage, black truffle ($358) and the homemade ravioli “del plin” stuffed with beef & spinach, red prawn tartare, black truffle ($348) are sure to satisfy.
