Cucina Presents White Asparagus Indulgence
White asparagus is found across Europe, but the German variety is especially prized. Chef Andrea has chosen the AAA-sized white asparagus grown in Germany’s Black Forest region. “The quality and aromas of white asparagus vary from region to region due to the different soil and weather patterns that affect harvesting. I prefer the German white asparagus because of its sweetness and plump size,” Chef Andrea explains.
According to Chef Andrea, the best way to savour white asparagus is to gently boil it until tender and then serve it with flavourful sauces. A perfect example is the poached white asparagus with hollandaise sauce and 24-month San Daniele ham (HK$328), which features the classic pairing of hollandaise sauce with white asparagus. The dish also boasts flavourful San Daniele ham from Northern Italy. The rich and delicate taste of this ham pairs beautifully with the sweetness of the white asparagus.
Also not to be missed is the starter of soft-boiled Taiyouran Japanese egg at 62 degrees, slipper lobster, white asparagus, black truffle caviar (HK$288). The sweet and smooth soft-boiled egg complements the small cubes of white asparagus, while the black truffle caviar enhances the unique aromas of this show-stopping dish.
Another chef-recommended dish is the glazed Iberico pork pluma, green pea purée, sautéed white asparagus with thyme (HK$488). Chef Andrea uses top-quality acorn-fed Spanish Iberico pork, which boasts a unique and nutty flavour. The honey-glazed pluma is not only tender and juicy but also matches beautifully with the subtle sweetness of the green pea and white asparagus.
The mezze maniche aglio olio & chilli, white asparagus, sea urchin, black garlic ($368) is an equally mouth-watering delicacy. This pasta dish features a subtle spiciness that complements the rich and robust taste of the black garlic and sea urchin. Meanwhile, the white asparagus delivers a pleasant crunch and distinctive aroma.
Seafood and white asparagus also make a great pairing since both boast a delicate flavour. Seafood aficionados can satisfy their cravings with the risotto with white asparagus & mixed seafood, red prawn carpaccio, oscietra caviar (HK$388), which celebrates the bounties of the land and sea. Meanwhile, the white asparagus cream soup with Hokkaido scallop and chives ($238) is a simple yet delicious creation that is sure to delight all guests.
