Visual Feast – When we appreciate food with our eyes, the tempting colours, exquisite shapes and rich presentations appeal to our senses at first sight. Grilling Seafood Platter of oysters, whole Maine lobster, salmon, jade whelk, white shrimp and other fresh seafood over charcoal until sizzling, not only locks in their rich juices but also preserves their natural sweetness more than steaming, with just the right texture.
Aural Delight – There is something magical about the sound of a beautiful voice that reaches out to the softest parts of the heart and sparks passion and inspiration. A selection of medium beef kneecap bones cooked at a low temperature with black truffle mashed potatoes and wild rice from Lake Superior, Canada – a rare and precious ingredient called the ‘caviar of grains’, deep-fried and crispy, produces a crunchy sound like a golden record, a delight to the ears.
Olfactory Allure – Different scents evoke diverse energies and elicit unique encounters. Succulent crow's feet pork is expertly seared in a skillet to eliminate any superfluous grease. It is then roasted with a medley of exquisite spices, including star anise, allspice, cinnamon, Shaoxing wine and red currant rice, until a delectably crispy texture is achieved. To complement this culinary masterpiece, we have paired it with luscious caramelised Thai red pomelo meat. The result is an irresistible creation known as caramelised aromatic crispy pork, which tantalises the senses and leaves you feeling invigorated from the very first whiff.
Taste Trigger – Sweet, sour, bitter, spicy, fresh, salty, light and rich. Beginning from the tip of the tongue, savour each flavour and texture of each bite. Tuck into the creative dessert, Bird’s Nest & Avocado Mousse – featuring delicate avocado intertwined with crystal clear bird's nest and added with smooth, mellow and refreshingly sweet sugared cinnamon – and then bite into the matching Wagyu beef puff pastry buns. A combination of Chinese and Western flavours that produces a highly unique taste.
