Suzhou, China, 18 February 2025 – As spring deepens, the mandarin fish leap with delight. It is the ideal moment to indulge in this exquisite delicacy. Mr. Nick Huang, Executive Chef of Chinese Cuisine at Niccolo Suzhou, prepares six mandarin fish dishes with the unique flavours of spring, available from now until 31 March 2025, and using six culinary techniques that blend tradition and innovation, each a tribute to spring's bounty. 

Showcasing Eastern and Western cuisines, Niccolo Kitchen is a culinary theatre where chefs present authentic cooking styles and tastes. Inspired by Marco Polo's journey of world exploration, Niccolo Kitchen welcomes guests aboard an exciting culinary odyssey to discover delicious and classic dishes from the local scene and from all over the world, with skyline views to match. This feast honours seasonal integrity, balancing smoky intensity with crystalline purity.

Smoked Mandarin Fish with Huadiao Wine is cured with aged rice wine, its amber flesh infused with pinewood smoke and floral liquor aromas. Mandarin Fish Meatballs and Sea Cucumber features minced fish paste enveloping diced sea cucumber, where oceanic sweetness meets velvety richness. Mandarin Fish with Black Truffle and Pickled Cabbage elevates Chaozhou's tangy greens with freshly shaved truffle, merging earthy depth with vibrant broth. Shredded Roast Duck Pastry Wrapped in Slow-Poached Mandarin Fish, resting in lemonade sauce, evokes mountain streams. Crispy Mandarin Fish with Sweet Soy Sauce showcases pan-seared belly glazed with sticky soy syrup, crackling caramel giving way to molten fat. Mandarin Fish Mixed with Green Prawns and Horseshoes stuffed inside tofu, pan-fried in homemade Malay sauce, is like snow falling on spring branches, soft and calm in the mouth, fragrant and sweet.
