The taste of Taihu Lake perfectly captures the essence of the season. From now until 30 June 2024, Executive Chef Jimo Ong draws inspiration from the features of Taihu Lake to showcase the delectable seasonal cuisine and the beauty of Taihu scenery, perfectly complementing the culinary ingenuity.

Since ancient times, the shores of Taihu Lake have been abundant in produce, with a tradition of "eating from the mountain and water". The unique local flavours, fresh lake bounty and seasonal vegetables are a culinary delight cherished by generations. Showcasing Eastern and Western cuisines, Niccolo Kitchen is a culinary theatre where chefs present authentic cooking styles and tastes. Niccolo Kitchen welcomes guests aboard an exciting culinary odyssey to discover delicious and classic dishes from the local scene and from all over the world, with skyline views to match.

Experience the delightful blend of sweet and sour passion fruit sauce, combined with the freshness of jasmine and the crispness of water chestnut. This unique combination will awaken your taste buds in the early days of summer. 

Selected "King of Freshwater Prawns", Giant River Prawn, supplemented with rich butter, and one of the Eight Immortals of the water, wild rice, enhance taste levels, rich and fresh, giving more aftertaste. Silver Fish drenched in the aura of Taihu Lake, one of the famous Taihu Lake Three Whites, paired with river prawns and fish floss, are spread on the pizza and drizzled with 15-year-old grape vinegar, offering a delightful combination of flavours and textures that are both delectable and crispy.

In addition, Chef Jimo also recommends Steamed Marinated Taihu Chicken and Crispy Mango with Braised Pork Belly. Using Dongshan's locally farmed local chicken, the meat is tender and tasty, shrimp wontons are rolled in it, and the innovative secret sauce is perfectly seasoned with peppercorns to increase the freshness and spiciness. Exquisitely crispy on the exterior and delectably tender within, and infused with the delightful fragrances of Lemongrass and pecan complemented by Balsamic Pearl, for a perfect balance of sweetness and tanginess.
