Popinjays at The Murray, Hong Kong presents a new A La Carte Menu with Italian Authentic Signatures
Drawing inspiration from his Tuscan roots and other regions around Italy, Chef Paolo has crafted a selection of traditional and authentic Italian dishes designed for sharing amongst family and friends. His passion for fresh, uncomplicated flavours aligns with Popinjays’ contemporary and convivial spirits.
The new menu highlights a series of classic Italian comfort foods, made with the highest-quality sustainable produce. Starters include the GRAN CRUDO, featuring a splash of fresh, sustainable seafood such as red prawns, scampi, freshly shucked oysters and Murray caviar. The VITELLO TONNATO, a classic Piedmont specialty of chilled slow-cooked veal slices in creamy tuna sauce with capers.
Signature mains include the COSTOLETTA ALLA MILANESE, a traditional Milanese veal cutlet fried in clarified butter instead of olive oil for an authentic North Italian taste, and the BRANZINO, a traditional South Italian dish with butterflied, deboned and grilled sustainable Atlantic Seabass is served with rosemary, sage, olive oil and fresh lemons.
Pasta offerings showcase Chef Paolo’s mastery, such as PAPPARDELLE AL BRASATO, the homemade pappardelle with 4-hour The Murray’s exclusive Braised Rangers Valley beef short ribs with Parmesan Emulsion, a favourite in Chef Paolo's own family recipe straight from his Tuscan home. The RAVIOLO AL SALMONE, delicate ravioli dish filled with luscious crabmeat and salmon, served in lemon-infused butter sauce.
Guests can complete their Italian culinary journey with a traditional sweet treat, the Baba Al Rum – a rum-soaked yeast cake stuffed with Chantilly cream.
