Hairy Crabs with Sweet Yellow Rice Wine – Female crabs from Yangcheng Lake weighing 3.5 taels each were soaked in five years Sweet Yellow Rice Wine for more than 12 hours. The ‘drunken crab’ offers a rich and robust flavour without losing the freshness and tenderness of the crab meat.
Hairy Crab Salad – The pomelo vinegar enhances the delectable sweetness of the crab meat, blended with chargrilled eggplant and roasted sesame, and complemented by a white wine jelly infused with a delicate crab flavour.
WOK-Fried Crab Meat – Eggs are scrambled lightly to resemble osmanthus flowers and then stir-fried with crab meat, yellow fish gelatin and silver sprouts. A simple dish made special by the sweet and fatty crab meat, bursting with the taste of autumn.
Hairy Crab Pasta – The concentrated yellow wine cream is made with Chinese yellow wine and mixed with Western-style pasta. Garnished with sea urchin and caviar, making the flavour of the crab even more pronounced.
